1999: Peter and Terry Langlois purchased the Paddock and renamed the establishment the “Smithsonian.”
Peter, totally changed the menu and offered more dinner choices more geared to a dining place. Tony worked very closely under Peter’s guidance for the next 12yrs working in the kitchen as a chef and working with Peter’s catering business. Tony also worked as an electrician, but still always loved going to work at night at the restaurant. He loved cooking and creating special food entrées.
2003: The Smithsonian performed a kitchen renovation.
The kitchen was enlargened, making the front pool room smaller, eliminating the pool table. The middle of the bar was opened up and liquor was stored around the lower portion of the bar. A new floor was put down covering the old wood floor. Many other items were done to update the building.
